To produce just one pound of raw Canadian honey, a hive of 60,000 honeybees flies the equivalent of twice around the world and visits two million flowers. Natural crystallization is a normal and desirable characteristic of pure, unprocessed honey. Honey is a supersaturated sugar solution glucose naturally precipitates out of solution over time. Pasteurized honey is filtered to remove the pollen and fine particles that act as crystallization nuclei, which is why it stays liquid longer. To reliquefy, place the jar in a warm water bath below 40°C. Crystallization does not indicate spoilage.
As a natural sweetener in tea, coffee, or smoothies. Spread on toast or drizzled over yogurt, oatmeal, or cheese. Used in baking and cooking as a natural sugar substitute. Enjoyed by the spoonful as a whole food. Avoid heating above approximately 40°C to preserve naturally occurring enzymes and flavour.
