Freeze drying (lyophilization) removes moisture by freezing the extract and reducing surrounding pressure to allow frozen water to sublimate directly from solid to vapour without passing through a liquid phase. This low temperature process preserves the full polyphenol and anthocyanin content of fresh acai berry without the heat degradation that occurs with conventional spray drying or heat drying. Freeze dried acai extract retains a higher concentration of bioactive polyphenols per gram than conventionally dried acai powder.
